Grilled Chicken Sandwich

Grilled Chicken Sandwich with Goat Cheese Avocado Mayo and Onion Jam

I love this sandwich!  My husband and I were playing with the balance of flavors and this is a winner.  Here is how we did it. I have been researching the ultimate sandwich bread and I believe Stecca Sandwich Bread is best.

Grilled Chicken Marinade
2 Small Chicken Breasts
1 Lemmon Juice and Zest
3 Tbs  Olive Oil
Salt and Pepper
Marinate Chicken for 1 hour or more if you have the time. Grill either indoors or out

Onion Jam
1/2 large Red Onion sliced
Salt and Pepper to taste
3 Tbs Brown Sugar
4 Tbs Red Wine Vinegar
Saute the onions with salt and pepper until soft and browning, add sugar and vinegar and continue to cook on low until paste like.


Goat Cheese Avocado Mayo
3 oz Goat Cheese
1/4 cup Mayo
1 Avocado
Salt and Pepper
Mash and mix together until creamy.

Slice the grilled the chicken, toast the bread and coat each side with creamy mayo.  Use a fresh, peppery arugula and top with onion jam.  Enjoy
