Lentil Tacos with Queso Fresco

Today I have been craving my all time favorite meal.  My lentil tacos with queso Fresco and salsa.  Years ago, I ate primarily a vegetarian diet and this recipe was a hold over from that time.  My whole family still loves it today.  Here is how I make it.

1 1lb bag of brown lentils
1 small white onion
1 handful cilantro
3 cloves garlic minced
1 tsp oregano
1 tsp  cumin
2 tsp chili powder
Salt and pepper to taste
Queso fresco
green onions
cabbage or lettuce


Clean the lentils and prepare to cook.  In a small dutch sauté onion and garlic in 1 Tbs olive oil, until soft. Put cleaned lentils in with onions and garlic and and cover with water about 3 fingers over the top of the lentils. Bring to a boil and then turn it down to a simmer.  Continue to check frequently and taste as you go.  Brown corn tortillas over your gas burner or in a pan, however you normally would prepare your tortillas for tacos.

Jalapeño Salsa


1 lb grape tomatoes
4 green onions
2 cloves garlic
3 jalapeños
Juice from 2 lemons
Olive oil
Salt and pepper

Dice vegetables and season to taste.   Buen Provecho!
